Job Title: Sustainability Manager
Job Description & Requirements
We are seeking a Sustainability Manager to improve sustainability and operational efficiency across our café and food-service operations. The role focuses on reducing food waste, improving resource usage, introducing practical digital solutions and supporting staff in adopting sustainable practices.
Job Responsibilities
1. Sustainable Food Operations &Waste Management
• Review food preparation, storage and service practices to identify sources of food waste, ingredient wastage and avoidable resource consumption.
• Develop practical waste-reduction approaches for ingredients, food preparation and day-to-day café operations while maintaining food quality and service standards.
• Establish procedures for identifying, recording and managing food waste and material wastage across relevant operational areas.
• Coordinate with kitchen and operations teams to incorporate sustainable practices into daily food-service activities.
• Evaluate the operational effectiveness of waste-reduction measures and identify areas requiring further attention.
2. Process Innovation & DigitalSolutions
• Research and assess digital tools, technologies and process solutions relevant to food-service sustainability and operational efficiency.
• Evaluate potential applications of technology for areas such as inventory management, waste tracking, resource monitoring and operational workflow.
• Support the selection and introduction of suitable digital solutions based on operational requirements, usability and business needs.
• Develop revised workflows to incorporate newly adopted technologies or process solutions into daily operations.
• Document technology-enabled processes and operating requirements for relevant users.
3. Sustainability Data &Performance Analysis
• Establish data collection methods for sustainability-related activities, including food waste, ingredient usage, packaging consumption and resource utilisation.
• Consolidate and analyse operational data to identify trends, patterns, variances and areas of inefficiency.
• Develop sustainability and operational KPIs to measure resource utilisation, waste reduction and the outcomes of improvement initiatives.
• Prepare periodic data analysis and reports to provide Management with visibility of sustainability performance.
• Translate analytical findings into evidence-based recommendations for operational planning and sustainability decision-making.
4. Sustainable Packaging &Resource Solutions
• Review the suitability of existing takeaway, food-service and packaging materials from environmental, operational and cost perspectives.
• Research and assess alternative packaging materials and products that can reduce environmental impact while meeting food safety and operational requirements.
• Evaluate opportunities to improve the use of utilities and consumable resources, including water, energy and operational materials.
• Engage suppliers and relevant external partners to obtain information on sustainable materials, products and resource-efficient solutions.
• Conduct comparative assessments of proposed solutions and present findings to Management for consideration.
5. Sustainability Project Management
• Plan and coordinate assigned sustainability projects, including defining project objectives, activities, timelines and expected outcomes.
• Coordinate project activities between Management, Kitchen, Front-of-House, suppliers and external partners.
• Maintain project documentation, implementation records and progress updates for assigned initiatives.
• Identify implementation issues, coordinate follow-up actions and communicate project status to relevant stakeholders.
• Review completed projects against their intended objectives and document outcomes and lessons learned.
6. Staff Training & SustainabilityCapability
• Develop and conduct staff training and briefing sessions on food waste management, resource conservation and sustainability practices.
• Translate sustainability requirements into practical guidelines and operating instructions for relevant employees.
• Support employees in understanding their responsibilities when implementing sustainability-related practices.
• Gather staff feedback on sustainability practices and identify training or capability gaps.
• Develop internal learning materials and share relevant sustainability knowledge and project lessons with employees.
Job Requirements
• Understanding of food waste management, resource conservation and sustainable packaging.
• Strong analytical skills, with the ability to interpret operational data, develop KPIs and prepare clear reports.
• Proficiency in Microsoft Excel or similar data analysis tools; familiarity with inventory management and waste-tracking systems is an advantage.
• Good project management and organisational skills, with the ability to coordinate multiple initiatives.
• Strong communication skills and the ability to work effectively with Management, kitchen teams, service staff, suppliers and external partners.
• Ability to conduct staff training and translate sustainability goals into practical operating procedures.
• A proactive, hands-on approach to solving problems and implementing improvements.
