DISHWASHING SUPERVISOR

• Lead and supervise the dishwashing team across all meal periods and event setups • Manage workflow to ensure a continuous supply of clean plates, cutlery, pots, and trays to the kitchen and service counters • Maintain all dishwashing and ware washing equipment; report malfunctions promptly • Oversee the correct dilution and use of cleaning chemicals in line with safety data sheets (SDS) • Enforce hygiene protocols: correct temperatures for wash/rinse cycles, sanitizer use, and drying procedures • Manage rubbish removal, grease trap monitoring, and general BOH cleanliness • Train and onboard new dishwashers on proper techniques and safety procedures • Maintain chemical inventories and liaise with suppliers for replenishment • Conduct and record daily equipment temperature logs and cleaning checklists • Support kitchen and FOH teams during peak periods and special events
